Marathon Training- Day 14 and Week 2 Wrap-Up

Day 14 (Saturday July 7)

breakfast- zucchini bread w/ non-dairy cream cheese

snack 1- cinnamon applesauce

lunch- zucchini/tempeh/eggplant/kale/beet green/brown rice/barley stir fry

snack 2- mini plums

dinner- leftover Chinese (fried seitan with broccoli) and a spring mix salad with tomato, roasted beets, and blackberries

snack 3- Pirate’s veggie booty, watermelon popsicle, and 3 one-bite raw “brownies”

workout:  4 miles of speed intervals, 43:28, 10:52 pace.  I know that doesn’t seem speedy, but it’s because half the run was slow “recovery” intervals

WEEK 2 WRAP-UP: 

  • 19 miles ran
  • 50 minutes biked
  • 2 toenails gone
  • 1,957 avg. calories eaten per day
  • 5.8 lbs. lost since day 1
