Marathon Training- Days 10 and 11

Sick of these yet?  I don’t really expect anyone to enjoy reading this.  It’s more for my own purposes.

Day 10 (Tuesday July 3)

breakfast- homemade zucchini bread w/ non-dairy cream cheese

snack 1- blueberries

lunch- summer squash roasted with shallots and coconut oil and some cinnamon applesauce

snack 2- spicy almonds

dinner- Hip City Veg :)   I got the arugula taco salad (w/ avocado, beans, corn, and  pico) and the “Bistro Bella” (wheat hoagie roll with portobellos, tomato, arugula, artichoke, and olive tapenade)

dessert- small piece of rhubarb fudge

My mom’s zucchini bread which I have always loved. This was the first time I made it since going vegan, and since all I had to sub for was 3 eggs, it wasn’t that hard. I also attempted to make it a bit healthier by halving the sugar, replacing half the oil with applesauce, and using some whole wheat pastry flour along with the white. Turned out just like I remembered!!

Day 11 (Wednesday July 4)

breakfast- zucchini bread w/ non-dairy cream cheese

lunch- Vega shake made with 1.5 cups almond milk and a big banana

dinner- 2 big slices of pizza from Blackbird (Daiya cheese, tomatoes, fennel, onion, broccoli rabe, eggplant, seitan)

dessert- 2 bowls of kettle corn and way too much rhubarb fudge
